ESPRESO DOUBLE CHOCOLATE CREAM CHEESE BROWNIES

Here is my famous recipe for brownies. This recipe has espresso powder but if you can find it you can substitute it for instant coffee. I hope you enjoy it!.

ESPRESSO DOUBLE CHOCOLATE CREAM CHEESE BROWNIES
Makes 16 (2x2-inches) brownies

INGREDIENTES

Brownie Layer
• 4 oz. (1 stick) unsalted butter, room temperature and cut into pieces
• 2 oz. semisweet or unsweetened chocolate, roughly chopped
• 1 cup sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• ¼ teaspoon salt
• 1 teaspoon espresso powder
• ½ cup all-purpose flour
• ¼ cup cocoa powder, sifted
• ½ cup chopped walnuts
• ½ cup chocolate chips

Cream Cheese Layer
• 4 oz. cream cheese, room temperature
• ¼ cup sugar
• 1 teaspoon vanilla extract
• 1 egg
• 1 tablespoon flour

INSTRUCTIONS:
1. Preheat oven to 350 oF and place the rack in the center of the oven. Line an 8-inch square baking pan with aluminum foil and grease with butter. Set aside.

2. Heat the unsalted butter in a small saucepan when it is hot remove from the heat and add the chocolate, stir until melted and let it cool slightly. (You can also melt the butter and chocolate in the microwave; make sure you set for intervals or 20 seconds until it melts).

3. In the meantime put the cream cheese, sugar, vanilla, egg and flour in the food processor and process until smooth or combine everything in a bowl and whisk until smooth and reserved.

4. In a large bowl whisk the sugar, eggs, vanilla, salt and espresso powder then add the melted chocolate and whisk until well incorporated.

5. Using a rubber spatula add the flour, cocoa powder, walnuts and chocolate chips and stir until the batter is smooth and glossy and it has not trace of flour.

6. Pour the batter into the prepared pan and spread evenly with the back of a spoon or angled spatula. Spoon the cream cheese mixture over the top and using a knife swirl the cream cheese into the brownies.

7. Bake for 30 to 35 minutes or until the edges are lightly brown. Remove from the oven and let it cool on a cooling rack before cutting or once cool put it in the refrigerator to make it firmer before cutting it into 2-ich squares.
